The Void Sake - Yokai Shoga Special Edition wax dipped bottle

In collaboration with The Void Sake Co. in Lexington, KY. This monster was inspired by their fantastic Emerge plum ginger seltzer! We started with their spent Sake kasu and added a gargantuan dose of plum and ginger puree to an array of fermented yellow, orange, and peach peppers from the field - Manzano, Maruga Scorpion, Lemon Drop, Scotch Bonnet, Fatalii, Datil, Habanero, Jay's Peach Ghost Scorpion, Peach Reaper and Sugar Rush Peach to name a few... backed by a second ferment of carrot, garlic, ginger and onion, finished with rice vinegar and a dash of lemon juice.
